INGREDIENTS
Main:
- 6 chicken breasts
- ½ cucumber
- 2 celery sticks
- 3 spring onions
- 4oz mange tout
Dressing:
- 1 garlic clove, crushed
- 2 tbsp grated fresh ginger
- 1 tbsp peanut butter
- 2 tbsp chopped fresh coriander (plus extra to serve)
- Pinch of sugar or mustard powder
- 4 tbsp light soy sauce
- 4 tbsp vinegar (rice or white wine)
- 2 tbsp olive oil
- 2 tbsp sesame oil
- 2 drops Tabasco or chilli oil
METHOD
Step 1:
- Preheat the oven to 200°C / 400°F / Gas Mark 6.
- Place the chicken breasts on a baking tray and bake for around 25 minutes, or until cooked through.
- Meanwhile, prep the veg: slice the spring onions, celery and cucumber into small chunky pieces.
- Steam the mange tout, making sure it keeps its crunch.

In a bowl, combine all the dressing ingredients - crushed garlic, grated ginger, peanut butter, coriander, sugar, soy sauce, vinegar, olive oil, sesame oil, and Tabasco. Mix well and set aside.
Step 3:
- Once the chicken is cooked and cooled, slice it into long strips and arrange it on a large serving platter.
- Scatter the chopped vegetables over the top.
- Drizzle over the dressing generously, then finish with a sprinkle of fresh coriander.
